Vietnamese Cooking 'An Com & An Choi'

Cookery Studio hosted Jules Serkin of Channel Radio 'SCOFF & QUAFF', Macknade Fine Foods and Urban Pantry Food among the participants on the Vietnamese Cooking 'An Com & An Choi' course held on 12 February 2015.

Amongst the participants on the Vietnamese Cooking 'An Com & An Choi' course held on 12 February 2015 were Jules Serkin of the Channel Radio 'SCOFF & QUOFF' show each Tuesday morning, Rosie Collins the marketing Manager of Macknades Fine Food, and Alex Perry and Victoria Kasler of Urban Pantry Food. Recognising that a key aspect of oriental cookery is good preparation by comparison with the short period of excitement spent in the cooking itself, everyone started by getting to grips with their knife skills.  Soon all were producing beautifully hand- cut juliennes of colourful vegetables and fine diced chillis, garlic and aromatic herbs. 

With our 'mise en place' we proceeded to design the lightest and freshest of Nem Thinh (Summer rolls) with dipping sauces which displayed the key balance of sweet, sour, salty, spicy and umami. With piles of chicken bones and pan-roasted spices we created a Vietnamese stock to serve as the base of a traditional Pho Ga (soup). Enjoying both of these for an early lunch lead to exclamations of ecstasy!

Pan-fried duck breasts marinated in dry roasted spices and then covered with a tamarind sauce made from scratch was served with a hard-hitting, green papaya salad which incorporated over 10 finely chopped chillis! The black rice accompaniment made a striking visual contrast.

To conclude, a timbale of glutinous rice flavoured with fresh ginger juice and split coconut, served with a vibrant mango was packed up for us as a Vietnamese 'Take Away'...

What was notable about our menu was its freshness, lightness and - dare we say it - its healthiness.

A great day, great food and great cooking companions at the Cookery Studio, everyone is determined to continue cooking in the Vietnamese style.
