This new class is designed to develop the skills of bread and baking in the artisanal style. Frankly, I know of nothing more comforting than the aroma of baked breads straight from the oven. Discover the satisfaction of baking your own. Once you have mastered how to make a 'parent' dough, you can create a vast range of breads really easily. Join us for a day of intensive hands-on baking as you learn to create a variety of bread dough, gaining an understanding of the chemistry involved....

On this Bread Making and Sourdough class you will:

  • Create a range of breads using fermented & enriched doughs whilst mastering the processes of kneading, proving ‘knocking back’ using bannetons and shaping 
  • Make a Sourdough 'sponge' (which will require ongoing nuture) & use a ferment, adding ingredients of your choice, such as Bacon, Stilton, Garlic, Walnuts, Fruits - the variety is endless...
  • Use olive dough to make a Flamiche or a 'hearth' bread such as a Fougasse
  • Create an enriched, sweet dough such as a Couronne or an Orange Pain Viennois 

This promises to be a rewarding, fun and energetic cookery course in which you can enjoy some of your bread straight from the oven with lunch. You will have plenty to take home with you, along with a recipe booklet - so that you can continue to enjoy your new skills and enjoy those evocative memories which bread inspires in all of us.

Please note that children aged 10 to 16 are welcome to attend and participate in any of our classes at the full cost of a place, but they MUST be accompanied by one paying adult.

We invite you to join us at 9.30am for coffee when you will meet other class members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the Cookery Studio team.
