'Baking & Afternoon Tea' offers you the opportunity to develop or extend your baking skills. Using the four key techniques of cake making: ‘creaming, melting, rubbing-in and whisking’ you will make a selection of sweet bakes and preserves to create a stunning ‘afternoon tea’ with optimum texture and flavour. This course is designed to allow you to develop your own repertoire and is sure to be both tasty and impressive.

In creating afternoon tea you will:

  • Make classic cakes & tray bakes such as Speculaas Gingerbread / Ultimate Chocolate Fudge Brownie.
  • Bake the perfect flavoured scones - delicious when served with home-made jams and lemon curd.
  • Bake from a selection of contemporary tea-time cookies such as lavender biscuits or ‘thick and chewy’ pecan cookies.
  • Arrange individual fruit tartlets with crème pâtissière and seasonal fruits and berries or frangipane fillings, focussing on presentation to create the quintessential afternoon tea.

This promises to be a rewarding and fun cookery course in which you can enjoy a delicious afternoon tea. As well as receiving a recipe booklet and new ideas, there will be bakery to take home so that you can impress your friends & family with treats. A simple light lunch will be provided.

We invite you to join us at 9.30am for coffee where you will meet other course members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of 8 people, the step-by-step tuition is aimed at those wishing to develop their baking skills.
