From making sweet pastries from scratch to creating a stunning selection of sweet classics, the Cookery Studio will teach you how to create the delectable treats you see in a Pâtisserie shop window. From perfect pastry tarts filled with crème patissiere to magnificent macarons and eclairs ... delectably delicious and inspiring.

On this Patisserie baking day you will master the skills of preparing sweet pastries, piping meringues, whipping up sweet fillings and creating delicious desserts.

You will:

  • Develop the skills of fine baking balanced with the art of using flavour, texture and presentation to create a patisserie selection 
  • Learn how to prepare a delicately flavoured macaron (macaroon) as you create the definitive almond and sugar - syrup meringue and pipe a sweet sensation 
  • Discover the ease of preparing a classic ganache which can act as a base for so many flavours and sweet fillings
  • Prepare and bake individual tartlets using pate sucree and learn how to master the art of the essential creme patissiere as you design a 'show-stopping' sweet dessert with seasonal fruit
  • Create a choux sensation by baking the time-honoured classic eclair or profiteroles

Through a mixture of demonstration and plenty of 'hands on' cooking, you will be guided through this baking class which will focus on key skills to create the beautiful and tempting patisserie selection which we love so much.

Please note that children aged 10 to 16 are welcome to attend and participate in any of our classes at the full cost of a place, but they MUST be accompanied by one paying adult.

This promises to be a fun & rewarding cookery course. You will have plenty to take home with you - along with a recipe booklet - so that you can continue to enjoy your cakes and pastries whenever you feel like being creative.

We invite you to join us at 9.30am for coffee where you will meet other course members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the cookery studio team.
