Classes are intended to be relaxed and fun, reflecting the Thai approach to life. Thai cooking is extremely flexible and, although you will be given recipes, the emphasis is on understanding the ingredients and flavours and using your senses to make adjustments while you cook. You will be introduced to the key ingredients and flavours in Thai cooking - sweet, sour, salty and spicy. Throughout the class and an 'active tasting' approach, you will learn how to create these flavours and, importantly, how to balance them. There is no need to have any previous cooking experience, just a love of food and a willingness to experiment!

Join our culinary journey as we introduce you to the street snacks and delicious dishes found in markets and restaurants from Bangkok to Chiang Mai. Discover the myriad dishes and cooking techniques that make up traditional and modern Thai cuisine and the sourcing of key ingredients.

This sample menu is a guide to the range of authentic, tasty street food and main dishes at the Cookery Studio:

  • Miang Kham, Betel Leaves with savoury topping and Sweet Chilli Sauce
  • Som Tam, the classic pounded Green Papaya or Pomelo & Prawn Salad
  • Blend an authentic red curry paste, to create a northern Chiang Mai Curry 'namphrik-gaeng-hung-lay' served with Mii Krob, Prawn and Crispy Rice Noodles
  • Discover how to make a classic Caramel Sauce for clay-pot cooked pork as in Muu Waan  
  • Create a deliciously sweet dessert, according to seasonal availability, such as ginger sticky rice cakes or spiced, roasted pineapple.

 This class will guide you through the sourcing of ingredients and the balancing of flavours so that you can develop a good understanding of the techniques involved in Thai cooking. You will have tasters to take home with you, along with a recipe booklet - so that you can continue to explore and experiment.

We invite you to join us at 9.30am for coffee during which you will meet other class members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the Cookery Studio team. At the end of cooking you will be able to dine - with a glass of wine - and enjoy the dishes you have prepared. Please note that the dishes listed on this course may vary due to the availability of fresh produce as a result of seasonal changes & availability.
