Italian food is undoubtedly one of our best-loved cuisines. At the Cookery Studio, we have designed a cooking day for those of you who would like to discover more about the most quintessential of Italian dishes. For those new to Italian cooking, this class is a perfect way to learn how to create the Italian classics from hand-made pasta, sauces, risotto, to biscotti.

3On our Italian Classics cooking day you will gain an understanding of basic Italian Cuisine as you:

  • Make a hand-made pasta dough from scratch, learning to shape it into bite-size pieces of delicate Ravioli or Tortellini; serving this with a classic Burro e Salvia (hot sage butter) sauce
  • Create a Potato Gnocchi and discover how to present this dish to full effect, pan-fried with podded broad beans, pea shoots & a Sugo Panna e Noci (the most delicious walnut, parmesan cream sauce ever!)
  • Use key ingredients to develop a richly flavoured Risotto Con Finocchi e Rucola 
  • Complete the afternoon session with a sweet taste of Cantuccini, a delighful almond biscotti

 This promises to be a creative and fun day during which you will enjoy a typical Italian lunch - with a complimentary glass of wine, recipes and lots of ideas to take home with you. 

We invite you to join us at 9.30am for coffee when you will meet other course members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the Cookery Studio team.
