The Cookery Studio invites you to join us on this new and vibrant class that makes vegetables & fish the stars of the show. Recent studies indicate that the Mediterranean way of eating is one of the healthiest and also appears to boost brain power. The emphasis on fruits, vegetables, whole-grains, beans, legumes & healthy fats makes for a nutrient rich high-fibre diet (in other words you won't be hungry). It is also relatively low in protein and saturated fat. In this class, you will learn how to use Mediterranean ingredients to create inspiring, delicious & healthy recipes.

You will:

  • Discover how to use & prepare Mediterranean ingredients as a base for a wide range of recipes
  • Learn key skills such as filleting fish, cooking pulses & grains and blending herbs & spices  
  • Create healthy salsas and dressings to add sparkling flavours to your dishes 

The sample menu below is a guide as to the type of dishes you might cook - please be aware that ingredients may change to reflect local availability:

  • Mediterranean Flatbreads / Cauliflower and Cumin Bites with Lime Yoghurt
  • Pan-fried Sea Bream / Mackerel stuffed with Chermoula and served with a Grain and Herb Melange / Caponata
  • Prawn, Fennel and Citrus Salad 
  • Roasted Aubergine with Buttermilk Sauce

Please note that children aged 12 to 16 are welcome to attend and participate in any of our classes at the full cost of a place, but they MUST be accompanied by one paying adult.

We invite you to join us at 9.30am for coffee where you will meet other class members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the Cookery Studio team. At the end of cooking you will be able to dine and enjoy the dishes you have prepared. You will receive a recipe booklet to take away with you. Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes.
