Vietnamese cuisine and 'Street Food' is one of the healthiest, most vibrant and flavoursome in the world. Journey from North to South Vietnam. You will learn to recreate vibrant dishes from across the South East Asian peninsula that can easily be reproduced at home. By incorporating stylish Vietnamese recipes and street food into your cookery repertoire you will be able to enjoy the flavours of the Orient anytime you like.

6From the following sample menu, you will:

  • Create one of the classic street food staples such as Prawn & Crab Wontons, Salt & Pepper Squid, Prawn Cakes, or Prawn and Mango Summer Rolls - ‘Nem Thinh’ - with a garlic, lime & sweet chilli dipping sauce
  • Create an authentic Pho (broth) with spices to make a Chicken or Duck Noodle Soup
  • Discover how to marinate & prepare 'Shaking Beef' with Black Pepper, served in the Vietnamese manner with cooling lettuce and sweet cucumber / Cook fresh fish fillets with Ginger Caramel
  • Learn how to blend ingredients with a crisp, mild sourness balanced against sugar and spicy chilli to create a refreshing ‘Som-Tam’ -  Green Papaya Salad or Lotus leaf salad
  • The Vietnamese typically round off a meal with fruit, so the day at the Cookery Studio will end with a ‘Vietnamese Sweet Fusion’ such as Banana & Sesame Fritters with Lime / Ginger Sticky Rice Cakes or Mung Bean Cakes.

This class will help you through the sourcing of ingredients and the balancing of flavours so that you can develop a good understanding of the techniques involved in Vietnamese cooking. We shall use a mixture of demonstration with plenty of 'hands on' cookery to guide you through this truly fascinating cuisine. You will have tasters to take home with you, along with a recipe booklet - so that you can continue to explore and experiment.

Please note that children aged 12 to 16 are welcome to attend and participate in any of our classes at the full cost of a place, but they MUST be accompanied by one paying adult.

We invite you to join us at 9.30am for coffee where you will meet other class members and your chef. We will talk you through the class menu and how the day will run before you move through to our purpose designed kitchen, surrounded by the beautiful Oast gardens. With small classes of around 8 people, the step-by-step tuition is fun and easy to follow as you are supported by the Cookery Studio team. At the end of cooking you will be able to dine - with a glass of wine - and enjoy the dishes you have prepared. Please note that the dishes listed on this class may vary due to the availability of fresh produce as a result of seasonal changes & availability.
